Pilaroc (pronounced pile a rock) was a simple name we came up with in describing the land on the northern end of Lincoln County; nothing but rocks. When we first moved there, we couldn’t believe the amount of rock on the land and couldn’t imagine anything growing there but cedar trees and more rock. But with our backgrounds (both dairy farmers kids that have been in the agriculture industry our whole lives), we knew we could make something work. Pilaroc Farms was created for two reasons: 1. To provide you the best local meat-eating experience possible and 2. So that our children could be raised deeply-rooted in agriculture, just as we were raised. At Pilaroc Farms, we demand that every animal is developed as if it were going to be served at our own table: we want it local, we want to know that is was raised humanely and be not only sustainable, but regenerative, and we want the best quality meat available. The nutrition, the health, how we and our partners handle and manage the livestock and the precise genetic selection is what we hang our hats on.
After a 2020 purchase of some family land, Pilaroc Farms now resides southern Lincoln County, Tennessee. All of our Angus cattle, Berkshire-cross pigs and Katahdin-cross sheep are pasture-raised. That means they spend their entire lives on pasture, from beginning to end. The animals are supplemented with a local grain-based diet once they get close to finishing to allow for a truly flavorful eating experience. It’s wholesome, safe, quality beef, lamb and pork with no added hormones or antibiotics. We encourage you to come by and visit us at Pilaroc Farms. You’re more than welcome to see where our cattle, sheep and pigs spend their lives. You will probably find our children, Wyatt, Tensie Ruth and John Colyar, out there scratching the cows behind their ears with one hand and a bucket in the other, so bring your boots…they’ll expect you to work.

We have been working so hard behind the scenes to create a space for you to not only find ALL THE THINGS local to Tennessee, Alabama and the southeast, but also working towards what we believe is the future for us…agritourism. The store in it self is up to 60+ vendors. So not only do we sell our beef, pork and lamb, but also products DIRECT from the farmer and all as local as we could get it. Eggs, goat cheese, ice cream, CHICKEN, BISON, grits, breads, cutting boards, kids toys, knives, jams, bison, soaps, lotions, tallow candles, maple syrup and sooooo much more. Another part of the store is a further-processing facility. We have finally placed field to fork in our hands. We will be doing the cutting and packaging of all our meats. We will be able to make our own bacon, our own UNIQUE sausage flavors, salamis, extended dry-aged beef, pork and lamb. The opportunities here are endless. But keep in mind, we are bringing you the absolute best and most unique product that's produced right here on this farm. Can you imagine?!And last, but probably the most important, is our agritourism part. We’ve got a ways to go on getting this section ready, but once we are ready to invite you to the farm, you’ll be able to kiss a pig, milk a cow and pet a bunny. Making friends with all the farm animals. We’ll have farm tours for those interested in the animals and for those interested in how we run this animal and meat business. We’ll have farm to table dinners, with chefs from all over, bringing you the best they possibly can. We’ll have farm camps, where you and your children (of all ages) can learn what it’s like to work on a farm.
And we will also host homsteading classes. Want to learn to make your own soap? Or start a bee hive. Or create a charcuterie board? Or maybe just need a dinner date with your husband where a chef teaches you how to cook an awesome tri-tip for 2. Or how about your kids learn how to sew? Or maybe some yoga on a cool Saturday morning on the farm. In case you didn’t know, Pilaroc Farms is run by a team of professionals; CEO’s, CFO’s, CXO’s and COO’s. Seasoned, industry veterans that really know how to manage a business. Their minds are focused on continual awareness and growth of the brand and their dedication to the craft is unparalleled in their field.
They also happen to be children; ages 12, 7, 4 and a newborn.
Many small businesses are managed by a single person – wearing every hat from decision maker to trash collector/toilet scrubber. When Pilaroc was formed, we wanted everyone to know this was a family AND a business. Everyone at Pilaroc is expected to get dirty and to wear multiple hats at multiple times.
So the CEO can take a meat order, the COO can deliver that meat and the CFO can send you the bill. While the Herdsman is busy breeding cows or sorting pigs. We somehow make it all work.
