Hillbilly's has been compared to Memphis Bar-B-Q. Folks from Memphis have said that it's the only Bar-B-Q in Chattanooga that reminds them of Bar-B-Q back home. I've never had Memphis Bar-B-Q. I just developed a method for cooking fall off the bone Bar-B-Q that I like and it seems a few thousand folks like it too.
