In an effort to stretch the benefits of food stamps, the Chickasaw Area Development Commission opened this cannery in 1973 and encouraged families to preserve their extra garden produce. The charge for using the facility was set at $2 per item; those prices are still in effect today. The cannery serves about 425 families a year from six counties.
